Question about cooking chuck roast beef in the crock pot...?

First of all I've cooked roast before (successfully). The situation is a little different this time though. I let the roast cook on low last night from about 11 until now. I added the veggies at 8 this morning upon which I turned the crock pot to high to try and cook the veggies asap. It is now 9:20 and the roast is done but the veggies aren't. I'm goin out of town and probably won't be back until 5. Should I take the meat out and leave the veggies on low? Should I leave it all in on low? There's a "keep warm" setting too, should I use that, or should I just take it all out and cook the veggies on the stove top when I get back?
